Celery has been a bit trickier to get figured out, but now I've got three celery plants growing!
1. When you cut up your celery stalk for cooking, make sure you leave about 1 inch or 1.5 inches of green at the bottom.
2. Carefully shave a very thin layer off of the bottom of the stalk, where the roots usually grow. I try to shave the bottom until all the brown coloration is gone, leaving only a nice white-ish color at the base. If you don't do this, there's a chance that the plant will rot before roots can develop.
3. Fill a shallow dish with a half a centimeter of water—just enough to cover the root base of the celery.
4. Change the water out every day for a week.
5. After a week passes, gently place the celery into some soil. Lightly pack the soil around it.
6. Water regularly. Don't down it, but keep the soil moist.
7. Et voilà! You're growing your very own celery!
